Low-Fat Turkey Chipotle Chili

Low-Fat Turkey Chipotle Chili is both healthy and tasty

2 tsp. vegetable oil, divided
1 lb. low-fat ground turkey (I used 99% fat-free)
1 onion, chopped
1 red bell pepper, seeded and chopped
2 cloves garlic, minced
1 jalapeno pepper, minced (remove the seeds and membrane if you want less heat)
2 tsp. ground cumin
1 tsp. ground coriander
2 Tbs. chili powder
1 tsp. balsamic vinegar
1 can (15 oz.) crushed tomatoes
1 can (15 oz.) diced tomatoes
3/4 c. beef broth or water
1/2 tsp. Worcestershire sauce
3 chipotle peppers in adobo sauce, minced (use 2 peppers for medium spice and 1 for milder)
1 can (15 oz.) kidney beans, drained and rinsed
1/2 tsp. salt or to taste
1/2 tsp. pepper
2 Tbs. chopped cilantro (optional)
1 c. shredded cheddar cheese (optional)
2 tsp. fresh lime juice (optional)
In a large pot over medium heat, add 1 tsp. of the vegetable oil. Add the turkey and break apart. Cook 8-10 minutes or until cooked through. Stir often to break up the turkey. Remove the turkey from the pot.
