Macaroni with Kale Pesto Alfredo Sauce

Anyway, I wanted to share this recipe for a light Alfredo sauce using greek yogurt. I don’t really like tomato sauce that much for pasta, but alfredo sauce? I will smother my noodles with delicious, white, cheesy sauce. It wasn’t until I started making Alfredo sauce from scratch that I realized how much butter and cream was in this delicious sauce. So I decided to try making my own lightened Alfredo sauce, but instead of just using cheese and salt to flavour the sauce, I wanted to add a healthy,

- 1 tbsp olive oil
- 1/4 cup chopped onion
- 3 cloves garlic, minced
- 1/2 cup vegetable (or chicken) broth
- 1/4 cup shredded parmesan cheese + more for sprinkling
- 1/2 cup greek yogurt
- 2 tbsp kale pesto
- Salt and pepper to taste
- 1 1/2 cups macaroni elbows
In a large pot of salted boiling water, cook macaroni elbows. Drain and set aside. Cook onions and garlic in olive oil over medium low heat until translucent and fragrant. Add vegetable broth and until it builds to a simmer. Add greek yogurt and parmesan cheese and mix until the parmesan cheese has melted. Add in the kale pesto and mix until incorporated. Mix macaroni with pesto Alfredo sauce and serve with extra grated parmesan cheese, salt, and pepper to taste.
