Yes, it’s Valentines Day. I know I should be baking cookies, cake and buying candy for The Hubby. Well, I don’t bake, so I’d have to buy the cake and cookies too! Anyway, last year we decided to “get rid of the chocolate dish” on the living room end table. It was just too easy to mindlessly dig into. So boom, cold turkey, it was gone. What was also gone were the chocolaty treats that we would give each other on EVERY “Chocolate” holiday. You know the one’s. Now there’s NO Chocolate Easter Bunnie

Bowl Ingredients:
2 cups Kale, Chopped
1 cup Chopped Roasted Asparagus. I had some leftover, so I didn’t even have to turn on the oven.
6 oz. cooked Chicken, Chopped. We had “Easiest Ever Roasted Chicken” last night, so again no oven needed!
1/2 cup Grain Blend. Feel free to use any Grain you like. Brown Rice, Quinoa, or Barley would be just yummy!
8 Grape Tomatoes, quartered
2 Green Onions, Chopped
1/4 cup Chopped Red Cabbage
2 Tablespoons Pan Toasted Pine Nuts. The Hubby suggested these to sub for the baguette. Smart!
1/2 cup Sauerkraut, Chopped
1 oz. grated Manchego Cheese

Chopped Style Dressing Ingredients:
1 Tablespoon Coconut Oil. I use one that has no coconut flavor.
1/2 teaspoon Honey
1 Garlic Clove, finely Chopped
1 1/2 Tablespoons Coconut Vinegar or to taste. Apple Cider would be a good sub.
1 Tablespoon Pesto. Do you make your own…It’s easy!
1/2 teaspoon Turmeric
Freshly Ground Black Pepper to taste. The Black Pepper raises the efficacy of the anti inflammatory properties of Turmeric.
Kosher or Sea Salt, to taste. With the Pesto, you may not need extra Salt.
Bowl Ingredient Prep: Chop’em and Drop’em as directed and in no particular order into a Large Serving Bowl. Dressing Prep: In a small microwave safe bowl, add the Coconut Oil, Garlic, and Honey....
