Mango Black Bean Quinoa Salad
With salad season just around the corner, you'll be excited to have this one in your arsenal of recipes. It's so beautiful and full of flavor. It will most definitely be making a regular appearance throughout the summer!

2 cups cooked quinoa, at room temperature or chilled
1 14 oz can black beans, drained and rinsed
1 medium mango, peeled and diced
1 red bell pepper, diced
6 green onions, thinly sliced
1/2 cup cilantro, chopped
4 tablespoon red wine vinegar
3 tablespoons extra virgin olive oil
1-2 tablespoons fresh lime juice
salt and pepper, to taste
