Delicious gluten-free maple pecan muffins! Topped with a sweet cinnamon icing and chopped pecans for a yummy breakfast treat or snack.

Muffins:
1 1/4 cups Pamela's Pancake Mix
1/4 cup water
1/4 cup sugar
1 egg
1 tsp vanilla
1/4 cup pecans, chopped
1 banana, mashed

Icing:

1 1/2 cup powdered sugar
2 tbsp milk
1 tsp maple syrup
1/4 tsp cinnamon
1/4 cup pecans, chopped
