1 cup dried currants or raisins
1/4 cup brandy or orange juice
1 package active dry yeast
1 1/4 cups warm milk ( 105 degree F to 115 degree F )
1 tablespoon sugar
1 cup all-purpose flour
2 3/4 cups all-purpose flour

3/4 teaspoon ground mace
1/2 teaspoon salt
3/4 cup butter
1 cup sugar

1 teaspoon grated lemon peel

Mandarin Orange Cake with Pineapple Frosting is so light and refreshing and is the perfect cake for summer (or any other time too)! The recipe begins with a cake mix and mandarin oranges and the frosting is made with crushed pineapple and vanilla pudding.
