This Meal Prep Chicken Lentil Soup is a nutritious bowl of vegetables, rice & lentils. Nourishing, comforting & takes less than 30 minutes to make. A delicious bowl of warmth for a cold day! Gluten Free + Low Calorie

1/2 cup dried lentils
1/2 cups brown rice
1 tbsp extra virgin olive oil
1 cup celery ( chopped )
1/2 cups carrots ( chopped )
1/2 cup green pepper ( chopped )
1 clove garlic ( minced )
5 cups chicken or vegetable broth
1/2 tsp. basil
1/4 tsp oregano
1/4 tsp rosemary
1/4 tsp pepper
1 1/2 cups cooked chicken ( 1/2 pound shredded )
15 ozs diced tomatoes
  1. Rinse lentils under cold water, drain and set aside.
