1 cup quinoa cooked
1 cup yellow squash ( sliced in medallions )
1 cup zucchini ( sliced in medallions )
3/4 cup white onion ( sliced in large pieces )
1 cup red bell pepper ( sliced in large pieces )
1 tsp cumin
2 tbsp extra virgin olive oil
salt and pepper to taste
