Meal Prep Greek Chicken Quinoa! Made in under 30 minutes in an Instant Pot. Paired with quinoa, tzatziki, cucumber and tomatoes for a Mediterranean style meal that is filling and full of flavor! Gluten Free + Low Calorie

1 lb chicken breast ( boneless, skinless, cut into cubes )
2 tbsp extra virgin olive oil
1/4 cup lemon juice
1/3 cup Greek yogurt
1/8 cup red wine vinegar
1 tbsp oregano
3/4 cup Greek yogurt
1 cup cucumber ( finely diced )
1 tbsp garlic ( minced )
1 tsp lemon juice
1/2 tbsp parsley ( or dill )
2 cups grape tomatoes
1 cup cucumber ( diced )
1 cup cooked quinoa ( I used black )
  1. Place the ingredients for the chicken in an Instant Pot. If you do not have an Instant Pot, see notes for alternative cooking methods.
  2. Close the Instant Pot and turn the valve to sealing....
