1/2 medium cucumber ( halved lengthwise and sliced )
1 cup chopped celery
1/2 cup sliced black olives
1/2 cup chopped walnuts
1 13.75-ounce can artichoke hearts ( drained and quartered )
1/3 cup sliced green onions
1/2 small lemon ( seeded and cut in 6 wedges )
1/2 cup olive oil
1/4 cup white wine vinegar
1/4 cup sugar
1/2 tsp. salt
1/4 tsp. pepper
2 cups baby spinach leaves
