Mediterranean Chickpea Salad with Almond Feta

2 tbsp red onion
3 oz olives
3 tbsp sundried tomatoes
1/4 cup parsley
1 1/2 cups chickpeas cooked
8 oz artichoke hearts
1/2 baked almond feta recipe
3 tbsp lemon juice
1 tsp olive oil
1/2 tbsp mustard
2 tbsp liquid leftover from almond feta
to taste oregano
to taste salt
to taste pepper

Gently smash and roughly chop the chickpeas to create a sandwich filling. In a mixing bowl, toss together the dressing with all of the other ingredients except the almond feta.
