This Mediterranean Mashed Potatoes is vegan and a great option for you who is trying to avoid dairy ingredients. It is as flavourful as any other mashed potato recipe, because it is loaded with olive oil and herbs.

2 lbs. (900g) russet or Yukon gold potatoes, peeled and diced
1/2 cup (125ml) cooking liquid
1/4 cup (60ml) olive oil
2 garlic cloves, minced
2 tsp. (10ml) basil, chopped
2 tsp. (10ml) tarragon, chopped
2 tsp. (10ml) parsley
Salt and pepper
