For the Soup:
1 pound boneless skinless chicken breasts, cut into 1-inch cubes
2 teaspoons olive oil, divided
1 medium onion, chopped
1 tablespoon chili powder
1 jalapeno pepper, seeded and minced
5 cups chicken broth
1 - 15-1/2 ounce petite diced tomatoes, do not drain
1 - 15 ounce black beans, rinsed and drained
2 cups frozen corn
2 teaspoons salt
1/2 teaspoon black pepper
For the Dumplings:
1 cup reduced-fat biscuit baking mix
1/4 cup minced fresh cilantro
1/4 teaspoon ground cumin
1/3 cup 2% milk
pinch of salt and pepper
