Mexican Cream of Corn Soup

3 ears of white corn elotes kernels removed (about 3 cups of kernels)
1/2 white onion
1 clove garlic
3/4 cup Mexican cream not sour cream
1 cup low-salt chicken broth
4 cups water
1/4 tsp. black pepper
1 tsp. salt
2 tbsp. cooking oil
