Mexican Grilled Corn Salad

This is a great summer side dish! It can be made ahead of time to make for an easy dinner!

4 ears of corn
2 1/2 tablespoons mayonnaise (I like Sir Kinsington\'s)
2 ounces cotija cheese
1/2 cup finely sliced scallion greens
1/2 cup cilantro leaves, finely chopped
1 jalapeño, ribs and seeds removed, minced
2 garlic cloves, minced or grated
1 1/2 tablespoons fresh lime juice, plus more to taste
Kosher salt
