Mexican Quinoa

Quinoa haters (and lovers) rejoice! This is probably one of my favorite quinoa recipes, ever.

2 tsp. olive oil
2 cloves garlic, minced
4oz can diced chilies
1 cup uncooked quinoa, rinsed and drained
1 1/4 cup vegetable broth
1/2 onion, chopped
1 can black beans rinsed
1 can diced tomatoes, with juices
1 cup frozen corn
salt to taste
you can garnish with avocado, salsa, sour cream (plain Greek yogurt), or cheddar cheese
