Mexican Rice in a Pinch

NEED: Saucepan with tight lid PREHEAT: Saucepan med. - Hi. COOK: 20 min. MAKES: 4 Servings

1 Tablespoon Olive Oil
1 Clove Garlic, minced
1 Onion, diced
1 1/4 Cup Chicken Broth
15 ounce Can Tomatoes with Green Chiles, diced
1/2 teaspoon Chili Powder or Cumin
1/4 teaspoon Oregano
1 1/2 Cup Jasmine Rice
Saute Garlic and Onion until tender. Stir in Broth, Tomatoes, Chili Powder and Oregano, bring to a boil. Add Rice, return to boil. Cover and simmer over Med. - Low about 20 min.
