8 ears corn on the cob ( shucked ) 1 tbsp vegetable oil 1/2 cup mayonnaise 1/2 cup Mexican crema or sour cream 2 tbsp lime juice 1/2 cup Cotija cheese ( finely grated ) 1 tsp chili powder 1/4 cup cilantro leaves ( chopped )
