Middle Eastern Turkey Flatbreads

This flatbread came out crispy, slightly nutty from whole wheat flour and somewhat sweet from the addition of cinnamon in the topping. Cinnamon may seem odd to some of you to add to a savory dish, but it works so well in this recipe, do not leave it out!

Dough:
2 cups all purpose flour
4 cups white whole wheat flour
One 1/4 ounce packet instant yeast
1/2 teaspoon kosher salt
3 tablespoons extra virgin olive oil
2 1/4 cups lukewarm water
cornmeal, for dusting
Topping:
6 tablespoons extra virgin olive oil
1/2 onion, finely diced
1/2 red pepper, finely diced
6 tablespoons tomato paste
1 pound ground turkey
1 1/2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon red chili flakes
1 teaspoon salt
2 plum tomatoes, diced
1/4 cup Greek yogurt
1/2 lemon, juiced
