Who could resist this trio of buttery, crumble shortbread, smooth, creamy caramel and decadent, rich milk chocolate? Life is good, right?

Shortbread Crust:
1 cup all-purpose flour
1/4 cup light or dark brown sugar
2 teaspoons cornstarch
1/4 teaspoon salt
1 stick (1/2 cup) cold unsalted butter, cut into 1/2-inch cubes
1 tablespoon ice water
1 large egg yolk

Caramel Layer:
1 (14-oz) can fat-free sweetened condensed milk (or regular)
1/2 cup light or dark brown sugar
6 tablespoons unsalted butter
2 tablespoons maple syrup
1 teaspoon vanilla extract
1/8 teaspoon salt

Chocolate Layer:
3/4 cup (6 ounces) good quality milk chocolate chocolate chips or chopped pieces
3 tablespoons heavy cream
