Mini Christmas Quiches
The tasty bit size treats will tantalize the taste buds and they look good too. The green of the asparagus and the red from the tomato adds to the theme of your Christmas get together. Makes 24 - 48 mini quiches depending on the size of your muffin tray... most people will want to eat 3-4 per person so allow this for your gathering. This recipe is in grams and Kilos

8 Sheets of Puff Pastry
6 medium sized Organic Free Range Eggs
3/4 cup Thickened Cream
3/4 cup Organic Milk
100g finely grated Tasty Cheddar Cheese ( not too sharp as you will take away from the main flavor of the quiche)
10g grated Pink Salt
10g cracked Black Pepper
5g Turmeric
350g tinned Asparagus cut into 2cm dices
150g Brown Onion diced
10g Butter
150g punnet Cherry Roma Tomatoes
50-75 ml White Wine (Riesling or Chardonnay)

350g tinned Asparagus cut into 2cm dices
150g Brown Onion diced
10g Butter
150g punnet Cherry Roma Tomatoes
50-75 ml White Wine (Riesling or Chardonnay)
Preheat oven to 180C /355F. Lightly spray 48 mini muffin tins with olive oil. (As an alternative you can put them straight into mini muffin cases for easier presentation and washing up).
Place Eggs, cream, milk, turmeric, salt and pepper in a jug and whisk well. Place in fridge until ready to use.
In a small fry pan saute off the onion with the butter. Once cooked through add wine and reduce for a few minutes. Set aside the onion to cool down.
Drain the asparagus in a colander dice then mix through the onion mix.
Slice the cherry tomatoes into little round slices.
With the puff pastry use a cutter to cut out rounds that are approx 5cm larger than your muffin tray. Ease them into the tin or muffin cases making sure you do not break the pastry otherwise the egg will leak.
Add a little of the asparagus mix into each case.
Now add a small pinch of grated cheese then the round of tomato.
Gently Pour the egg mix until it reaches almost to the top of the pastry.
Place in oven and cook for 20 mins or until golden.
