Classic cinnamon rolls with a chocolate mint twist!

Rolls:
1 cup mashed potatoes (about 2 medium potatoes)
1 cup reserved potato water
3/4 cup butter OR margarine
3/4 cup sugar
2 teaspoons salt
1 cup hot water
2 envelopes Fleischmann's® Active Dry Yeast
1/2 cup warm water (100° to 110°F)

8-1/2 to 9-1/2 cups all-purpose flour

1/2 cup butter OR margarine, softened
1 cup sugar
1-1/2 tablespoons cinnamon
1 10 oz package mint chocolate chips
Icing:
3 cups powdered sugar
6 tablespoons butter OR margarine, softened
1 teaspoon vanilla
6-8 tablespoons Peppermint Mocha Coffee Creamer or Milk
