1½ teaspoons instant espresso powder
1 cup unsalted butter, soft

1 cup (180 grams) brown sugar
1 teaspoon vanilla extract
1 large egg
10 ounces Andes Mint Baking Chips

Ganache
¼ cup heavy cream
4 ounces dark chocolate (approximately ½ cup + 2 Tablespoons dark chocolate chips)
¼ teaspoon mint extract

Coffee Buttercream
3 Tablespoons unsalted butter, soft
1 cup (125 grams) confectioners\' sugar
1 Tablespoon heavy cream
