Minted Pea Purée with Prawns, Feta and Pomegranate

This tartine is slathered in minted pea purée, then topped with prawns, feta and a few pomegranate seeds. Super simple but so tasty!

20 mint leaves
2 tablespoons olive oil
pinch salt and pepper
juice of half a lemon
4 slices sourdough bread ( toasted )
20 cooked king prawns ( peeled )
feta cheese
pomegranate seeds
