Today's recipe will totally change the mind of those salad haters who always have excuses not to eat salads. Our Mixed Greens Quinoa Tofu Salad is the best lunch or dinner meal salad.

SALAD:
60 g of cooked quinoa
1 cup of mixed greens
2 radishes
3 cherry tomatoes
1 small spring onion
2 tablespoons of cooked chickpeas
FOR ROASTED TOFU:
70 g extra-firm tofu
1 tablespoon of olive oil
1/4 teaspoon of oregano
pinch of salt
DRESSING:
1 tablespoon of extra virgin olive oil
1/2 lemon juice
1 teaspoon of tahini
pinch of salt
