What's better on a chilly day than a delicious bowl of hot soup! Well I have the perfect recipe for you. Mommy's Feel Better Soup, named by my son, is one I make all the time especially when someone comes home with the sniffles. It's a great weeknight dinner. Throw all your ingredients into one pot and in less than an hour you will have the most comforting bowl of veggie and meatball soup.

2 carrots - chopped
2 potatoes - chopped
1 onion - chopped
1 celery - chopped
1 10oz package of frozen spinach
3 32oz box of chicken broth - I use Swanson Organic Chicken Broth
salt to taste
little meatballs (optional) ---> see below in notes.

Add all your chopped vegetables and frozen spinach to a large pot
Pour in the broth to just about a little more than half way - you may only need two boxes depending on the size of the pot
Cook on high heat...
