Mom's Chocolate Zucchini Loaf

This loaf was the only chocolate cake I even knew growing up. It is spicy and chocolatey, and the best way to get your kids to eat their vegetables! You can bake it in a loaf pan, muffin tins, mini loaves or as a bundt cake... it is great anyway you bake it!

4 eggs
2 cups sugar
1 cup of canola oil
2 1/2 cups flour
2 cups shredded zucchini
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 1/2 teaspoons vanilla
1/2 teaspoon salt
1/4 cup cocoa powder
Heat oven to 350. Mix all dry ingredients together except sugar. Set aside. Beat eggs, add sugar & oil and beat until smooth. Alternately add dry ingredients and zucchini. Blend well together. Bake for...
