Mom's Enchilada Pie

This is one of my mom's creations that I have updated over the years. I've added black beans and Kalamata olives to the filling as well as smoked paprika. When my mom used to make this, she would build the casserole in a tall round baking dish. In this way she could layer one tortilla on top of another. She would cut it into wedges, much like a layer cake. I like to build mine in an oblong baking dish, like a lasagna.

1 pound ground turkey
1 15oz can of black beans, drained and rinsed
1 15oz can of fire roasted tomatoes
1 large onion diced
3 cloves of garlic minced
1 15oz can tomato sauce, reserve 1/3 cup
1 8oz can tomato paste
1 tablespoon chili powder
1 tablespoon smoked paprika
1 teaspoon cumin
1/2 cup chopped kalamata olives
3 cups shredded low-fat cheddar cheese
8-12 corn tortillas
3 tablespoons olive oil
salt and pepper to taste
