PREP: Grease loaf Pan PREHEAT: Oven 325 F BAKE: 1 hour MAKES: 10

1 1/2 Cups Flour
1/2 teaspoon Baking Soda
1/2 teaspoon Baking Powder
1 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
1 Cup Sugar
1/2 Cup Cooking Oil
1 Cup Zucchini, grated
1 Egg, beaten
1/2 Teaspoon Lemon Juice or 1 tsp. Vanilla Extract
1/2 Cup Walnuts or Pecans, chop ( opt. )
1/2 teaspoon Baking Soda
1/2 teaspoon Baking Powder
1 Teaspoon Cinnamon
1/2 Teaspoon Nutmeg
1 Cup Sugar
1/2 Cup Cooking Oil
1 Cup Zucchini, grated
1 Egg, beaten
1/2 Teaspoon Lemon Juice or 1 tsp. Vanilla Extract
1/2 Cup Walnuts or Pecans, chop ( opt. )
Whisk together first 5 ingredients.
Mix Sugar, Oil, Egg, Zucchini & Lemon Juice. Mix in Flour mixture until just blended.
Fold in Nuts, pour in pan and bake.
Cool 10 Min. Remove From pan.
