1 1/4 cup sugar
2 tsp baking soda
2 tsp cinnamon
1/2 tsp salt
1 cup zucchini, finely grated
1 cup carrot, finely grated
1 apple, peeled and finely grated
1/2 cup coconut, shredded
3 eggs
1/2 cup applesauce
1/2 cup oil
2 tsp vanilla
