Mozzarella Bruschetta

The addition of melted mozzarella takes this bruschetta over the top in the best way possible.

8 pieces french bread, thinly sliced
8 tsp olive oil, for brushing
1/4 cup white onion, thinly sliced
1/4 cup diced tomatoes
8 slices mozzarella cheese
Preheat oven to 350 Brush 1 tsp olive oil on each piece of bread. Top each piece of bread with the onion, tomatoes, and cheese. Bake for 5-7 minutes, broiling for the last minute, until the cheese is melted.
