8 oz fresh sliced mushrooms
1/4 c finely diced onion
1/4 c all purpose flour
1/4 t dry mustard
3/4 t salt
1 t chopped fresh thyme
2 c chicken broth ( or vegetable broth )
2 c half and half ( or heavy cream )
2 T sherry
1/4 c chopped fresh parsley ( or chives )
