Nanaimo Bar Ice Cream Sandwich

Made entirely from scratch, these Nanaimo Bar Ice Cream Sandwiches are a refreshing take on the iconic Canadian treat. Perfect for Canada Day or 4th of July! Wow your guests on a hot summer's day.

2 eggs
¾ cup granulated sugar
¼ cup custard powder
2 cups whipping cream
1 cup whole milk
1 tsp. vanilla extract
1 tsp. peppermint extract

½ cup butter, softened
¼ cup sugar
½ cup + 2 tbsp. brown sugar
1 egg
½ tsp vanilla extract
¾ cup all-purpose flour
2 tbsp. cocoa
½ tsp. baking soda
¼ tsp. salt
¼ tsp. baking powder
¼ cup graham cracker crumbs
½ cup unsweetened coconut
1 cup chocolate chips
