1 Double 8 Cattle Company Miyazakigyu Wagyu Strip Steak
1 tsp. Toasted Sesame Oil
1 tbsp. Grapeseed Oil
4 tbsp. Soy Sauce ( divided )
2 tsp. Sugar
12 oz. Dry Japanese Udon Noodles
3 Scallions ( sliced thin on a biased cut )
Fresh Ginger ( 1-INCH-PIECE, peeled and sliced )
1 PACKAGE Narutomaki Fish Cakes or Fish Balls with Roe ( 5 OZ, sliced into bite-size pieces )
2 tbsp. Mirin
Dashi:
6 cups Water
1 oz. Kombu ( Dried Kelp )
1 cup Katsuobushi ( Dried Bonito Flakes )
8 Dried Shiitake Mushrooms
