These no bake tricolor mini cheesecakes are vegan and gluten-free but everyone will love them.

Base:
1/2 cup raw almonds
1/2 cup dates
1 tablespoon grated coconut
1/8 teaspoon vanilla powder
Filling:
¾ cup soaked raw cashew
1/3 cup coconut oil
1 tablespoon maple syrup
1/3 cup coconut cream
1/3 cup raspberries
1/3 cup blackberries
