4 cloves garlic
1/2 onion
1 red bell pepper
1/2 zucchini
15 ounce can diced tomatoes
1 1/2 cups cups water
1/2 tsp saffron threads
2 cups penne pasta
1 cup Greek yogurt
sea salt
black pepper
freshly chopped parsley
