One Pan Saucy Chicken and Potatoes

This dish is savory and eats very much like a thick stew and the potatoes do a fabulous job of absorbing the different flavors of the sauce. I recommend serving it with a thick slice of crusty bread, or a salad if the weather ever finally takes a turn for the better!

3 Tbsp extra virgin olive oil
2 boneless skinless chicken breast, cut into 1" pieces
3 cups quartered & sliced russet potatoes (about 3 potatoes)
1 white onion, sliced
5 cloves garlic, minced
? cup chicken broth
? cup heavy cream
1 (14.5 oz) can petite diced tomatoes
2 Tbsp tomato paste
½ tsp salt
½ tsp pepper
¼ tsp crushed red pepper (optional)
