One Pot Coconut Curry Pasta

1 tsp oil
1/2 yellow onion
1 inch ginger
3 garlic cloves
1 1/2 tbsp thai red curry paste
1 1/2 cups lite coconut milk
1 1/2 cups vegetable broth
12 oz whole wheat pasta
1 1/2 cups zucchini
3/4 cup carrot
1 bell pepper
2 tbsp almond/peanut butter
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp coconut sugar
to taste salt
1 lime

Warm the oil in a large pan until shimmering. Add the onion and sprinkle with salt, and stir. Cook until the onion is slightly softened. Add the ginger and garlic and cook for 1 minute, until fragrant....

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
