One Pot Coconut Curry Pasta

1 tsp oil
1/2 yellow onion
1 inch ginger
3 garlic cloves
1 1/2 tbsp thai red curry paste
1 1/2 cups lite coconut milk
1 1/2 cups vegetable broth
12 oz whole wheat pasta
1 1/2 cups zucchini
3/4 cup carrot
1 bell pepper
2 tbsp almond/peanut butter
2 tbsp soy sauce
1 tbsp rice vinegar
1 tbsp coconut sugar
to taste salt
1 lime
