Just the right amount of sweet and with an extra zing from the ginger.

12 cupcakes
Carrot Ginger Muffins:
140 grams flour
175 grams sugar
0.5 teaspoon cinnamon
1 teaspoon baking powder
0.25 teaspoon salt
200 grams carrots, finely shredded
20 grams ginger, finely grated
175 milliliters vegetable oil
2 eggs, beaten
Orange Ginger Frosting:
60 grams salted butter, room temperature
225 grams cream cheese, room temperature
240 grams powdered sugar
2 tablespoons orange zest, finely grated
2 tablespoons orange juice, fresh
1 tablespoon finely grated ginger
For decorating:
150 milliliters candied ginger (can be omitted)
