1 Tablespoon finely chopped shallots
1 stick of cold, unsalted butter, sliced into tablespoons
1/4 cup of heavy cream
1/4 cup chicken stock
1/4 cup white wine vinegar
1/8 Tablespoon salt
1/8 Tablespoon white pepper
1 Tablespoon Mandarine Napoleon
1 large Orange Roughy Fillet

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
