I have a recipe that will change up the side dish at your next meal! Sweet Potato Fries! Sweet Potatoes are a good source of beta-carotene, and many other vitamins and minerals. They are a complex carbohydrate and they’re full of fiber. But the best part is…they are delicious! These are really good with any kind of meat. I especially love these with pork.

2-3 large sweet potatoes
1 T. cornstarch
2 T. olive oil
1/4 t. salt (or to taste)
