Parsi Scrambled Eggs With Mango

Eggs are ubiquitous in Indian Parsi cuisine, and used in a variety of innovative ways. This unique and delicious breakfast or brunch dish of spicy, soft scrambled eggs enhanced by sweet and fragrant ripe mangoes, is always a big hit!

4 eggs
1/2 teaspoon salt
freshly ground black pepper ( to taste )
1/4 teaspoon red chili powder
1 green chili ( finely chopped, or to taste )
4 tablespoons fresh coriander leaves ( chopped divided )
1/2 small onion, finely chopped ( about 4 tablespoons )
1/2 teaspoon ground coriander
1/2 tomato, finely chopped ( about 4 tablespoons )
1 large, ripe mango ( peeled, cored and cut in to small dice preferably Alfonso mango )
1 1/2 tablespoons ghee (clarified butter) ( butter or vegetable oil )

Beat eggs and add salt, pepper, red chili powder, green chili and 3 tablespoons of the fresh, chopped coriander leaves to eggs, and mix thoroughly.
