1 cup sliced carrots
2 stalks celery diced
2 zucchini sliced and quartered
1 summer squash sliced and quartered
1 small onion diced
2 10 oz cans of diced tomatoes undrained
2 cups uncooked pasta {any shape}
1 tsp pepper, onion powder and garlic pepper
2 tsp salt
2 tbs oregano
1 tbs concentrated tomato paste
1 1/2 cups Mozzarella Cheese divided
