This delicious pea and mint omelette is super easy to make, tastes delicious and makes a perfect healthy and nutritious breakfast or lunch in no time at all. I’ve added nutritional yeast to the omelette as it gives a really cheesy flavour and tastes delicious – it’s a great healthy alternative to cheese. Hope you enjoy it! :)

1 tbsp. nutritional yeast
1 tbsp. fresh mint, finely chopped
Zest from 1 lemon
splash of almond milk
