Pea Salad with Bacon & Cheese

Great for picnics and barbecues.

4 cups frozen peas, thawed
3 large eggs, hardboiled, quartered
6 ounces sharp Cheddar cheese, cubed
1/2 cup red onion, diced
8 slices thick cut bacon, cooked and diced
3 Tbsp. fresh parsley, minced
2/3 cup sour cream
2 Tbsp. mayonnaise
2 Tbsp. sugar
2 Tbsp. apple cider vinegar or red wine vinegar
1/2 tsp. salt
1/2 tsp. pepper
  1. Mix sour cream, mayonnaise, sugar, vinegar, salt and pepper.
  2. Set aside.
  3. Place peas in a bowl.
  4. Add cheese, onion, bacon and parsley.
  5. Add half of the salad dressing...
