Peach Baked Oatmeal

a delicious make ahead meal that can be reheated for busy school mornings

2 cups of rolled oats {I use Bob's Red Mill}
1/3 cup of sugar
1 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
2 cups of milk
1 egg
2 tsp vanilla
2 tbsp melted butter {I used coconut butter}
1 peach pitted and sliced
combine all of the dry ingredients {mix well} place the oats in a 1 1/2 qt baking dish whisk together the milk, egg, vanilla, and melted butter pour over the oats - and stir just to combine everything top...

Marinated Taro Root

A marinated snack that can be used to replace late night bad habit cravings!

8 small taro roots
water
salt
1 cup yogurt, mixed with enough water to submerge roots (add salt)

  1. Wash the taro roots well.
  2. Slightly cut a slit into each root, but not big enough to split the root into two pieces. This will allow the water and marinade to go into the taro root
