These Peach Cobbler Crumb Muffins are soft, crumbly and full of sweet peaches.

1 Dozen
1 stick butter, melted
1/2 cup sugar
1/2 cup flour
1/2 cup brown sugar
1/2 cup quick oats
2 cups flour
1 tsp. baking soda
1 tsp. baking powder
15 oz. can sliced peaches, cut into quarters and reserving 1 Tbl. of the juice
3 tablespoons butter, melted
1/4 cup sugar
1/4 cup brown sugar
2 eggs, beaten
2 tsp. cinnamon
1 tsp. vanilla
1/2 cup milk
1 tablespoon peach juice
1 cup powdered sugar
1/2 tsp. lemon extract or lemon juice

Double Pie Crust:
2.5 cups all-purpose flour
1 tsp. salt
2 tsp. granulated sugar
1 cup unsalted butter ( cold and cut into cubes )

If you are following us since the beginning, then you know how much we love pumpkins. We had some leftover pumpkin puree and decided to create the best recipe for Vegan Pumpkin Bread!

Bread:
210 g spelt flour
70 g almond flour
2 tablespoons coconut flour
1 1/2 cup pumpkin puree
130 g coconut sugar
1 teaspoon baking powder
1 teaspoon baking soda
75 ml unsweetened almond milk
75 g melted coconut oil
