Peach Passion Fruit with Cream Cheese Frosting
These gorgeous cupcakes are filled with chunks of peach and tangy passion fruit. It is baked perfectly, soft tender and light. 2 3/4 cups all-purpose flour ( spooned into measuring cup and leveled-off )
1/2 tsp salt
1/2 tsp baking soda
1 cup unsalted butter ( softened, plus more for greasing the pans )
2 cups sugar
2 tsp vanilla extract
4 large egg ( at room temperature )
1 cup buttermilk
3-4 fresh passion fruit ( pulp )
2 peach ( diced into small cubes )
12 oz cream cheese ( at room temperature )
1 1/2 stick 12 tsp unsalted butter
1 tsp vanilla extract
pinch of salt
4 cups confectioner sugar ( 1 lb )
4 tbsp peach and passion ( juice )
