These cupcakes are a soft and fluffy vanilla cupcake with a soft and gooey peanut caramel filling, topped with a peanut butter frosting.

Vanilla Cupcakes;
110g Butter, softened
½ Cup Caster Sugar
2 Eggs
1 ½ Cups Four
1 ½ Tsp Baking Powder
1 Tsp Baking soda
¼ Tsp Salt
¾ Cup Milk
2 tsp - 1 Tbsp. Vanilla Essence (Depends on your personal tastes)
Peanut Caramel Filling;
1/2 Cup Brown Sugar
50g Butter, melted
3 Tbsp Milk
1/4 Cup Peanut Butter
Peanut Butter Frosting;
250g Icing Sugar
20g Butter, Softened
1/3 Cup Peanut Butter
2 Tbsp Milk (Optional)
First make the peanut caramel sauce. Place the butter and brown sugar in a saucepan on a medium to high heat. Once the butter has melted, add the milk and bring to the boil. Boil for at least 2 minutes...
