Perfect Moscow Mule

I go crazy for a good margarita, but there is one other drink that won my love after a happy hour with co-workers a while ago: the Moscow Mule. I have NEVER had a better Moscow Mule than the ones I (still) enjoy at Ruth’s Chris, but my at-home recipe is actually pretty close (and a whole lot cheaper).

3 oz vodka
1/4 of a fresh lime, squeezed (extra for garnish if you like it limey)
1 pack stevia
1/2 can ginger beer
Pour the vodka, lime juice and stevia together into a shaker. Shake thoroughly, then pour into a glass with ice. Top with ginger beer, and give it a quick stir to combine.

Rich and fudgy, this easy Chocolate Zucchini Bread is the perfect cross between a chocolate pound cake, brownies, and a classic loaf of zucchini bread! It's moist and tender thanks to sour cream in the batter, and studded with miniature chocolate chips for even more decadent flavor. 2 t vanilla extract
2 c all purpose flour
1/2 c unsweetened cocoa powder
1 (½ t) baking powder
½ teaspoon baking soda
½ teaspoon kosher salt
1 c shredded zucchini ( patted dry )
